Strawberry Spinach Salad

This is the salad the Peggy Toole made at Fr. Bill's going away party

Ingredients

Dressing Ingredients
1 lemon (to get 1/2 teaspoon lemon zest & 2 Tbls lemon juice)
2 T white wine vinegar
1/3 C sugar
1 T vegetable oil
1 tsp poppy seeds
   
Salad Ingredients
8 oz (1 ½ cups strawberries), hulled & quartered

½

medium cucumber, sliced & cut in half
¼ small red onion, sliced into thin wedges (1/4 cup)
1 package (6 ounces) baby spinach
¼ cup sliced natural almonds, toasted
   

 

Preparation

  1. Whisk dressing ingredients together until well blended; refrigerate until ready to use

  2.  (Bake natural almond slices for 10-12 minutes on a cookie sheet or small bar pan – let cool  Sprinkle on salad after dressing poured on salad & salad tossed)
